Hello all, and welcome to Thursday! I hope everyone is having a great week so far and are ready for the extended holiday weekend. Memorial Day Weekend is upon us which to me means two things; it’s the official start of summer and BBQ season…hurray!!
I’ve been reading a few new blogs out there, and none of them have dived into BBQ recipes yet after all it’s been raining every weekend here in Chicago-land so we have yet had a chance to really dive into the season. But I’m sure some of them are having great weather and have been able to get their grilling on. Not so for me yet, boo!
As a result of the weather around here I’m still cooking inside, which is fine by me. Today’s offering is for all the men in your lives; Hungry Man’s Omelet. This omelet is sure to fill them up with all the energy they are going to need for all the “honey do projects” inside and outside of the house. Flank steak, eggs and mozzarella are all you’re going to need to make this happen. And he will be of happy and full knocking out that list whistling as they work! Warning though; some will want to take a nap after eating.
I need to make a confession here; I over cooked my omelet. What can I say it just got away from me this time, and as I was taking pictures of said omelet I was thinking I could not possibly post this recipe? Then I thought to myself, “Mistakes are made in kitchens all the time”. From me all the way up to the big boys and girls who run the best kitchens in the world, mistakes are made. And that’s O.K. you’re always learning in the kitchen and always should be. I never have met a chef who claimed to be perfect at everything, there are always stumbling blocks. By the way I have made thousands of omelets during my career, and I usually have an egg-white omelet for breakfast with no issues.

Hungry Man’s Omelet
Ingredients
Flank steak- 1 cup (diced)
Eggs- 4 (extra-large, beaten)
Butter- 2 Tbsp (divided)
Mozzarella- ½ cup (shredded)
Cajun seasoning- 2 Tsp (optional)
Salt & pepper- to taste
Method to the Madness
1) In a large non-stick sauté pan melt one Tbsp of butter over medium-high heat. Add the flank steak season with Cajun seasoning, and cook for 6 minutes or until desired doneness. Set aside.
2) In another large non-stick sauté pan melt the other Tbsp of butter over medium-high heat. Add the flank steak and cook for 2 minutes add eggs, and cook for 4-5 minutes, season with salt & pepper, then flip and continue cooking for another 2-3 minutes. Top with the mozzarella and turn off heat, let rest for 1 minute until cheese begins to melt.
3) Carefully slide omelet out of pan onto a plate and fold one side over the other.
4) ENJOY!!
